There are countless restaurants, cafes, and take-away joints of all types to be had all over the city. Food in the city is usually decent and food poisoning a rare occurrence if you stay away from stalls on the street. However, if you are looking for a transcendent dining experience in Cairo, there are relatively few places to go…. And, as of the writing of this review, one restaurant tops them all - Aqua at the Four Seasons Hotel in Garden City, Cairo. One does not generally think of fine Japanese dining in Egypt, yet this little slice of heaven on the 2nd floor of the Four Seasons is an example of the best Japanese-Fusion cuisine, period. Reviewed by Daniel Kracer From the moment one steps off the elevator into the foyer of the restaurant level of the hotel, quality is evident. As you make your way into Aqua, you encounter a small entrance hall lined with shimmering fish tanks filled with vibrantly colored fish. At this point you are sure to be intercepted by staff asking, in more than reasonable English, for your reservation (note: please call ahead…you’ll want to be sure of a table!). When your name has been run through their stringent security process, and has passed the “are you supposed to be here?” test, you are led past the main sushi-preparation area to a breathtaking dining room with arguably the best set of Nile-view tables in all of Cairo. We were immediately asked about drinks. Now, you would think that at a place like this, you would get pretty well screwed on the alcohol… Not the case. The prices were a bit more than the run-of-the-mill bar/restaurants in Cairo, but certainly not extortionate. Local beer is LE30 (including “plus-plus”) and good local wines LE 120/bottle (including “plus-plus”). We opted for local beer and an after dinner martini (spirits are on the pricey side…) Also of note: if you want a *censored*tail that isn’t on the menu, you can describe it and they will attempt to make it for you – like a dirty martini, yum! Sushi is usually a piece-by-piece, drawn-out affair for most – order, eat, sit chat, order, sit, eat, chat – but you can avoid this process at Aqua by ordering some very unique starters and entrees. We decided to start with Ahi tuna Tar-Tare, with a lime and cilantro salsa and a Caesar Salad with sesame-crusted prawns. Both starters were presented brilliantly, and the quality of the food was evident upon the first tastes of each dish. As we waited for our starters, we were given a sushi checklist to order piece-sushi or roll-sushi. We also kept our menus, in case we wanted adapted seafood sushi-style dishes. However, we went traditional and ordered sushi/sashimi/maki type piece orders. The order consisted of shrimp tempura maki (hand rolls), toro (red tuna) sushi, cucumber rolls, and California rolls of various quantities. The sushi came quickly and was presented beautifully on china, decorated with Asian characters and scenes. The soy sauce and wasabi were fresh and delicious, with bits of sliced ginger-root available for palette cleansing. After eating the starters, it was a perfect amount of food, which of course left room for dessert. Dessert was spectacular: a dish filled with generous dollops of fruit sorbet. Mango, lime, guava, strawberry and coconut ices were served along with a wonderful white chocolate sauce, artistically placed on the sides of the platter. Coffee and after dinner drinks were served as the waiters fussed over us, asking how we like the meal. All the while, the view of a moon splashed Nile filled with feluccas reminded us that good food AND a beautiful atmosphere can be had if you know where to go – Aqua, Four Seasons! The name “Cellar Door” has been noted to be the most beautiful sounding combination of words in the English language. Not too tucked away, but just below street level. The Cellar Door gives the guest a feeling of finding a special place within, yet away from Cairo. The surroundings are warm and the walls lined with Katie Hollamby’s fine art photography. Her photos are perspectives of Cairo her view is unique and fresh. Her photography ties in well with the overall ambiance of this inimitable Bistro. Service The Owner Chef is very hands on and his professionalism shows through to his staff. Our service was well timed and our dishes were well presented. Graciously greeted at the door and shown to our seats we were promptly attended to. We mentioned that it was our intent to relax and wished to have a very leisurely meal. This did not present a problem and we were left to peruse the extensive menu. Menu Selection Chef Ayman Samir Ezzat continuously changes his menu to reflect the freshness of the season. Each course on the menu has a nice variety of dishes that will appease any appetite. I can only describe the menu as diverse to say it is one cuisine or another would be difficult. A little Italian, a little Mediterranean a little Eastern a little Western and a little imagination. While we perused the menu we nibbled on garlic bread and a lovely fresh salsa. Freshness and assortment is the theme throughout the menu. Seasonal salads and appetizers feature the vegetables that are at the seasonal peak. The Homemade pasta selection features interesting flavor and texture fusions. The portion sizes are reasonable so you can have the full dining experience. Variety continues with the entrees featuring Fish, Lamb, Duck, Beef, and Chicken. A unique mixing of flavors and textures makes this menu innovative and inspiring. Drink Selection An added bonus is having a selection of drinks offered that will complement the menu. Special house *censored*tails are on offer as well as an array of spirits. The wine list was a pleasant surprise complete with a full selection of wines available in Egypt. Without the gouging prices that we see in most restaurants. Overall experience - Our evening was extremely pleasant; I would not hesitate to recommend this as one of my top ten. Midweek is much quieter and provides a good atmosphere. Restaurant is, for me, a bit pricey and the quality not as good as the bar food.
